To catch the difference look at an early cent next to modern cent, the relief and beard and everything changes.
Also look at certain years next to others and you'll see changes. I can't list the exact changes but some years I always know from the portrait like 68-69-73 are easy to pick from a pile. There are other years that changed the bust too.
My simple description on those is:
(maybe someone can add to this)
early - more beard detail, looks more like Abe
68 - bold but mushy/worn
69 - sharp but less relief
73 - often a very deep rim
zinc - less relief and less detail

Chuck can give you the changes made over the years. He is the one that made mention og them, when I first started in varietys. You will also find you can identify a coin from the REV. It has sutle differences, that make it stand out, from the others. I can't name them, but it is well documented.
