Actually, there are many nice varieties for nickels. 1941, 42, 45, 46, 54, and 1964 have many nice ones worth collecting (P,D, and S mints). I know you mentioned circulation strikes, but there are many more proof varieties that are inexpensive and definitely worth collecting.

The period from 1956 through 1964 is rather prolific for doubled dies in most series - proof sets with more than one coin doubled are not uncommon, and finding three doubled die coins in a single set is not out of the question.
