Hi Andy,
Actually, you have a rather wide open question there. Those of us who photograph coins for the coppercoins.com web site use a stereo microscope, an adjustable light source (most likely fiber optics) and a digital camera. This can be quite expensive, but normally the quality of the pics justify the expense. There are as many ways to do this as there are photographers. The question should be to what extent, and what quality pictures are you looking for. We can fill in a little more detail if you can answer that question specifically. We can give you the names of microscope distributors, the names and specs of the cameras we use, and the types of light sources each of us use. There are currently three of us who take the pictures you will find on the site, (Chuck, Bob, and Coop) and I am sure any one of us can point you in the right direction.
